Probably the image manifest is what you are looking for?

The manifest file (.manifest) resides in the same directory as the root
filesystem image. This file lists out, line-by-line, the installed
packages.

The file contents look like this:

...
dropbear armv7at2hf-neon 2019.78-r0
dtc armv7at2hf-neon 1.6.0-r0
e2fsprogs armv7at2hf-neon 1.45.4-r0
...
